Hold onto your taste buds! The first lab-grown fish 🐠 has hit the food scene and it's now being served up in a restaurant. Wildtype, a groundbreaking startup, claimed victory last week when the FDA greenlit their lab-grown salmon for public consumption.
The "cultivated salmon" is currently available exclusively at Kann, a award-winning restaurant in Portland, Oregon. While the California-based company isn't the first to receive the FDA's nod for a lab-grown food (that title goes to 2 other companies' cultured chicken in 2022), its lab-grown salmon breaks new ground by being the first fish to pass FDA inspection 🙅♂️.
Unlike lab-grown chicken and beef, Wildtype's researchers have focused on producing sushi-grade "saku" cuts, which are intended to be eaten raw. The team painstakingly harvests cells from Pacific salmon, then cultivates them in specially designed equipment before adding a few plant-based ingredients to fine-tune the flavor, texture, and appearance.
If you're hungry for more, keep an eye out for Wildtype's cultivated salmon popping up in other restaurants in the coming months. But, you might find it hard to come by if you live in one of these eight states that have already imposed a ban on lab-grown meat:
- Florida
- Alabama
- Mississippi
- Montana
- Indiana
- Nebraska
These states' restrictions are not entirely without controversy. Critics are quick to question the impact on the farming industry, yet lab-grown meat's comparative costs suggest it's unlikely to render traditional options obsolete anytime soon.
